In the Philippines the sugar extracted from cane is called Muscovado. It is an unrefined sugar produced with a traditional and simple process. The cane is crushed and the sugarcane juice is concentrated by boiling and evaporation, using the cane residue itself (bagasse) as fuel. Muscovado thus maintains all the nutrients that are lost in the traditional refining of white sugar. It is a sugar rich in minerals, particularly iron. It is not chemically bleached and the entire production process observes the principles of organic production. The natural presence of molasses gives it a dark colour and a non-crystalline appearance with an intense flavour and a slight liquorice aftertaste.
